Super good dinner tonight -- @damn_delicious' One Pot Parmesan Pasta (I'll link in first comment below) topped with grilled Cajun chicken (my recipe, need to type it up!), grilled asparagus, fresh parm. This combo is a keeper! 👍🏻
My favorite summer dinner: pasta with loads of tomatoes and basil from our garden, olive oil, salt, pepper, and a generous dusting of grana padano. Simple and SO good. I always save a bit of the pasta cooking water and toss everything together (minus the cheese) for 1-2 minutes over medium heat. Top with the freshly-grated cheese, and enjoy. 🙌🏻🧀🍝🍅
Fearless Baby is 5 months old, y'all. How did that happen?! He's an absolute ray of sunshine and is entering maximum squishy baby phase. The best! 😍

Rolling 90-ish teeny tiny meatballs was oddly satisfying. (Each are about raspberry-sized). Getting fried, getting tossed with rigatoni/bechamel/lotsa cheese, then the whole thing is baked and delicious! 😋

Busy week has meant lots of takeout and meals made from leftovers, so it's time to get back into some fresh cooking! Prepping dinner -- Sesame Soba Noodles with Gai Lan, Mushrooms, & Ginger-Lime Peanuts. 🍜🍄🥜
Bun-free burger with sharp cheddar + balsamic onions // pearl couscous with roasted veg, fried halloumi, lemony yogurt dressing // tomato, cucumber + basil salad = awesome dinner to finish up a wonderful weekend. 🍔🍅🧀☀️
In case you're wondering what's one of the things keeping me busy these days, here's Mr. Fearless Baby! Four months old, and an absolute sweetheart. We feel so lucky he joined our family! 💛
Shawarma-spiced pork tenderloin with couscous, peas, + yogurt sauce. 🎉 Also, my pork tenderloin isn't accidentally overlooked -- I like it well done. No pink pork centers for me, please! 🕺🏼

Prosciutto-wrapped (and Swiss-topped) chicken with sage/tomato/spinach risotto. After 5 days of making really good homemade meals, I'm giving myself permission to serve all leftovers, freezer meals, + takeout next week. 😜
Tonight's A+ dinner - spaghetti with chorizo, baby heirloom tomatoes, jalapeño, + basil. Spicy and SO incredibly good. (Recipe from @mariobatali for @hellofresh, except I tripled the chorizo. OF COURSE I DID).
Penne with pancetta, peas, pine nuts, + mint. I swear, the simplest pasta dishes are often the most delicious. And my 4 year old loved this! Always a win when your kiddo unexpectedly loves a meal. 😋🎉
This may not be the prettiest meal but it was so so sooooo good. Pork, eggplant, + squash stir-fry w/ sesame + ginger over brown rice.
Grilled sweet Italian sausages and served with blistered tomatoes, fresh basil, + cheesy kale polenta. As silly as it sounds, I'm proud of myself for tackling the grill when my husband was out. I don't know why the grill still intimidates me, but it does! I showed it who's boss this time, though. 🔥🙋🏻
Brought dinner to some new parent friends tonight, and tried something lighter than my usual casseroles + pasta dishes -- lemony Greek grilled chicken served up on a bed of roasted veggies (peppers, onions, broccoli, eggplant, mushrooms, zucchini, + squash), with a fresh loaf of multigrain bread.
Perfect night for grilling! Made some tweaks to a Hello Fresh meal - grilled Ethiopian Berbere chicken with sautéed zucchini, cilantro rice, + lemon yogurt sauce - and it turned out 👍🏻👍🏻!
So excited for Mother's Day weekend fun with my family! Relaxing morning ☀️✔️ Mexican lunch 🌮✔️ Ice cream shop visit 🍦✔️ Napped with the baby 😴✔️ ... and it's not even officially Mother's Day yet! So grateful for these two little loves. 💕
