My first attempt wasn't so great, mostly because there wasn't enough enzyme in the mix to properly break down the starch in the rice. So I tried again using Chinese yeast balls (上海酒餅丸) which contain a mix of microbes to turn starch into sugar. This attempt also used Thai glutinous rice.

Verdict: Not bad. The flavour's partway between a short mead and choujiu (稠酒), which I guess is to be expected.
