The monsoon rains drench everything in a ruby light as we fly along the Congo River, slowly winding in a lazy coil from the Atlantic Ocean to the hills near lake Tanganyika. It's been an thrilling adventure to see firsthand all the work by @janegoodallinst and team. Farewell Congo - and thank you for all the inspiratuon. I'm in a 4-wheel drive hurdling towards the border of the Odzala Kokoua National Park, and a 14-hour drive to the airport. Feeling blue about leaving x Richard

Mermaids are everywhere in the Congo. Or so it's believed. Every village has its own mermaid (even if there's no water around). They are genuinely feared and courted. The most feared African mermaid is a protective and fearsome water goddess named Mami Wata who is worshipped by Africans in at least fifty cultures in more than twenty countries from Senegal to Tanzania. On our last night in Congo we hope to find her. But instead we see a few wild elephants swimming in the river, so perhaps our mermaid has blessed us too.

VOLUME UP: a great Silverback Gorilla charges another male who was threatening his females. We were seated about 10 feet from the Gorillas, watching in complete silence from the forest floor. If you turn the volume up, you can hear him roar at the other guy. We woke to leave camp around 5am, trekking though the dense forest for about three hours until we found this Gorilla troop.

The smell of warm buttery popcorn fills the air - and I get the instant visceral reaction to smelling it outside a movie theater. Alas, it's a sign from nature: fresh Leopard urine, which smells exactly the same. We're trekking through the Odzala forest just after dawn, gorillas ahead.

We stood very very still, in complete silence, in the middle of the forest, 14 hours from Brazzaville. The only sound we could hear was the sound of foliage moving and the gorillas eating. Patiently we waited. And after while they came. We had started hiking just before dawn, around 6am. Adi, our guide, took us through the dense foliage, so dense in parts that they used a machete to clear a tiny pathway. It was here we would remain for a couple of hours, watching the early morning unfold in the forest. See more on Insta stories 👆🏽 X Richard

Honor Toudissa's first restaurant was destroyed by the 2012 explosions that rocked Brazzaville, the capital of the Republic of the Congo (at least 250 people were killed and 13,800 injured in the blasts). Broke and without a space, he opened his new restaurant in a tiny annex adjacent to a monastery. It's named L'espace Liboke, traditional food from the villages of the Congolese savannah reinvented for today. It was one of the best meal I have ever tasted, and a pleasure to meet someone trying to run his own business and also change food culture in an entire country (Honor trains young chefs to promote local dishes and works to create an academy of Congolese gastronomy). @chefstablenetflix please take note of this man. In Brazzaville, the capital of the Republic of the Congo, there's not so much in the way of anything. And if you are looking for good food, best look elsewhere. But we heard of a guy named Honor Toudissa, who has a restaurant named L'espace Liboke. It took is a long time to find his restaurant, tucked away in a yard at the end of a dark street. Even when we arrived I thought it was a mistake... a single room, which looked like a garage, with fly screens as windows, and a small open kitchen. We were the only table. But nothing could have prepared us for what was next: Honor prepared the best meal I have ever tasted. Here's ground pumpkin seed wrapped in leaves of cassava from the equatorial forest. Doing this kind of food anywhere would be extraordinary - but here in Brazzaville it's a miracle to be this creative and have the courage to open a business like this. X Richard

A lazy Saturday in Brazzaville before we go back into the jungle. We came to see the Basilica of St Anne: a modernist 1949 masterpiece - the crowning achievement of French architect Roger Erell, who was known for fusing Western architectural with African construction methods. It's dazzling green ceramic roof tiles and brutalist copper doors are like nothing else here. A good injection of great design before we go back to Mother Nature x Richard
