  • @kandkerickson It's hot & sweet peppers in a garlic creme sauce with baguette & a side of tiny tomatoes. It was a little bit hot for us, but the flavor was excellent. :)

Cranberry Sourdough Stuffing
9 cups cubed sourdough bread about 3/4 of a rustic loaf
1 1/2 cups fresh cranberries
2 tbsp water
2 tbsp pure maple syrup
8 tbsp grass-fed butter
1 whole red onion finely chopped
2 stalks celery thinly sliced
2 tsp dried sage
1 tsp chopped fresh rosemary (you can also used dried)
1 whole pink lady apple roughly chopped
2 cups chicken or turkey broth
2 large eggs
salt and pepper to taste
Preheat oven to 350 degrees F. Place the bread cubes on 2 baking sheets and bake until nice and dry, about 15 minutes, stirring once. Remove allow to cool.
Meanwhile, place the cranberries, water, and maple syrup in a saute pan. Bring to a simmer over medium heat, and simmer until most of the water has evaporated, about 3-5 minutes. Remove to a plate. Wipe out the pan.
In the now-clean pan, melt the butter over medium heat. Add the onion and celery. Cover and cook, stirring now and then, until the onion and celery are tender, about 15 minutes. Add the sage and rosemary and cook 2 more minutes.
Place the bread cubes. apples, onions and celery (along with all the butter) in a large mixing bowl. Whisk together the chicken broth and eggs. Pour over the bread cubes and mix well. Fold in the cranberries.
Pour into a 13x9-inch baking dish. Bake in preheated oven for 25-35 minutes, or until the bread cubes have absorbed the broth.
Remove from heat and allow to sit for 10 minutes before serving. Store any leftovers in the refrigerator for up to 5 days.
Recipe Notes
DO AHEAD: You can make the bread cubes up to a week in advance. Make sure to store in an air-tight container!
You can cook up the cranberries and onion and celery up to 5 days in advance.

When I first made this recipe, I only used half of an onion. I prefer it with the whole onion, and Reuben likes it better with only half (he's an onion hater). Adapted fr @aberdeenskitchen

SECOND: This Crispy Potato Casserole is a fancy Thanksgiving side idea for you. Helen obligingly modeled it for me. She must have been around Jim's age then. How time flies! 😭⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
5 medium-sized potatoes (I used russets and reds, but I think golds would work as well)
4 tablespoons butter, melted
salt and pepper
3 1/2 ounces bacon, chopped into little pieces
thyme sprigs (fresh or dried)
Preheat your oven to 375 F (190 C). Peel the potatoes and slice them very thinly. Brush a round baking dish (mine was about 7 inches) with some of the butter. Arrange the slices upright in the dish. Pour some of the butter over the potatoes and brush the rest on top of the potatoes.
Sprinkle with salt and freshly ground pepper. Bake, uncovered, for 1 hour and 25 minutes. If the potatoes start to look too dry, brush them with some of the butter in the bottom of the pan.
Meanwhile, as the potatoes are baking, cook the bacon in a cast iron skillet over medium heat until crispy. If you don’t like your bacon overly crispy make sure to under cook it slightly.
Sprinkle the bacon over the potatoes, add a few sprigs of thyme and slide it all back into the over for another 25-35 minutes, or until the potatoes are nicely crisped (but not over-done). Add a bit more salt and pepper if desired.
Serve hot with sour cream or pesto. Any leftovers can be reheated in a pan with some butter.

Sometimes, you just gotta make pancakes for breakfast. If you want to try something new and flavorful, give my Dirty Chai Pancakes a go! They're "dirty" because they're made with coffee as well as chai. I also have a recipe for a spice caramel sauce to go in too. Indulgent? Yes. Worth it? Yes.

But if you let it go a little too far, throw it into this Pear German Pancake (or Dutch Baby, as James and Helen like to call it), and no one will be the wiser. Even if your pear is slightly on the crunchy side, it will soften in the oven.
Serve with homemade vanilla icing and spiced caramel sauce to turn this into a dessert. 😋

You guys, there's SNOW in the forecast. 😩I'm just not prepared for this! Not like snow in October is strange here in northern MN, but I wasn't done with fall just yet! I've been making a lot more comforting casseroles lately. This Chicken and Biscuits Pot Pie is one of my all-time favorites. My sister made something similar with CHEESE on top. I'll have to try that next time I make this. 😋

Happy Friday, friends! This has been one busy week for me. I shot 3 recipes yesterday alone. 😴 Deadlines aren't my favorite, but they sure make you get stuff done!
ALSO: I got bangs! My little sister (@bingarenee, AKA hair cutter extraordinaire) cut them for me, and I love them! Still figuring out how to style them...if you have any tips, please let me know!

First of all, does anyone else think the Instagram algorithm makes things awkward sometimes? I'll be scrolling through my feed when I come across a photo that I love. I give it a double tap, only to discover that it was from 2 weeks ago. Makes me look like a total creeper! Do any of you feel like that?
Second, I've got a dynamite recipe for One-Pot Sausage and Veggie Rice. Yes, it's Monday, and I don't think any of us feel like washing more dishes than we need to.
