@morghen It's easy! I just cut 1 yellow bell pepper into quarters, and 3 garlic cloves, and about 2 cups of small tomatoes in half (but any will do), season with pepper and garlic powder and put them on a baking sheet lined with foil in the oven at 400 degrees for about 25 minutes. Meanwhile drain 30 oz of chickpeas and put them in a food processor and add 1 1/2 tbsp lemon juice and process until smooth. Then add the tomatoes, pepper, and garlic along with 1 1/2 cup baby spinach leaves and process until smooth. My processor is a little small so I did it in batches.
