Blackened chicken breast, onions, bell peppers, no shredded cheddar-jack cheese and eggs served on country potatoes topped with guacamole, jalapenos, pico de gallo, olives and no sour cream. No toast. No fun.

- organic ground beef (wanted ground pork but when got home it was beef... oh well) sautéed in organic garlic EVOO with garlic & onions; cooked till brown
- added sliced fingerling potatoes
- added organic orange juice to help cook the potatoes
- cooked potatoes till tender; flavored with salt & pepper

LUNCH:
- sliced organic boneless/skinless chicken thighs cooked in organic garlic EVOO with garlic & onions
- added a can of organic coconut milk & boiled
- added chopped bok choy then flavored with pepper & salt

DINNER:
- thinly sliced all natural beef browned in organic garlic EVOO with garlic & onions
- added organic coconut aminos
- added organic broccoli & cooked till tender then flavored with salt & pepper

- organic spicy cilantro chicken sausage simply cut & cooked in EVOO
- oven roasted organic Brussels sprouts

- mild Italian pork sausage boiled in water then seared in EVOO & then sliced

Made orange sauce:
Ingredients:
2 Roma tomatoes, halved lengthwise
1/2 yellow onion, sliced into 1/2-inch-thick rounds
1 cup vegetable oil
3 large cloves garlic, peeled
1/2 cup packed dried arbol chilies, stemmed
1/3 cup cider vinegar
1/2 cup water
1 tbsp. kosher salt

BREAKFAST:
- oven roasted organic sweet potatoes
- all natural boneless-skinless chicken thighs. Sliced & sautéed in EVOO with some garlic & onions. Added loads of spinach. Salt to taste.

LUNCH:
- oven roasted Brussels sprouts with olive oil
- all natural thinly sliced beef. Sautéed in EVVO with garlic & lots of onions. Added organic broccoli. Flavored with coconut aminos & salt.

- spicy Italian pork sausage(removed from casing) sautéed in EVOO with some garlic & onions. Added 2 bags of southern greens blend (mustard, turnip, collards, spinach) from Trader Joe’s. Cooked down with some chicken broth & coconut aminos. Salt to taste.
