^^^ Currently devouring. I found this awesome Thai Protein Bowl at the local @cafezupas and yeah omg. It's kale with edamame, tofu, broccolini, cucumbers πŸ₯’, peppers, cashews and a yummy spicy dressing, but would be great with vinegar and avocado πŸ₯‘ too. Amazing that I didn't have to make it myself. πŸ˜‚πŸ€£ I added carrots πŸ₯• and roasted mushrooms πŸ„ for added yumz. πŸ‘… I am trying to get back on track with eating in my last trimester here. These are my favorite kinds of meals because they’re so easy to throw together with leftovers in the fridge. Any veggie or bean or fruit you have on hand goes perfectly!

A big pile of mixed greens, chickpeas, roasted broccoli, fresh raspberries and radicchio. =====================================
Any nut based dressing will work. This one has cashews, oranges, strawberry balsamic vinegar, dates and hemp seeds!

Green smoothie base (romaine, collards, celery, apple, banana, lemon, orange) topped with raw rolled oats (love the texture!), walnuts, goji berries and drizzle of coconut yogurt. =====================================
Awesome texture in this bowl, and I love mixing it all together and eating it messy style!! :D

So simple yet so filled with goodness. =====================================
My red cabbage and red onion saute (I just sautΓ©ed it in a pan with a couple tablespoons of water), some chickpeas and a few sesame seeds.

Did you know that sesame seeds are a super high calcium food? So therefore tahini (ground sesame seed paste) is a great choice as well. You could eat this little snack just how it is, or drizzle some balsamic vinegar or even a tiny bit of Bragg’s. And it’ll keep you full for a long time!

Some of the yummiest meals are the simplest!

You can just take a pile of a few veggies or fruits and beans and use a simple dipping sauce to have a fun meal, or just mix it all together for new interesting combos!
=====================================
This is fresh raspberries, chickpeas, red cabbage starry and sautΓ©ed shiitake mushrooms, with a dipping sauce made from almond butter, balsamic vinegar and dates. I ended up just mixing it all together and having different surprising bites! :)

A lunch like this takes 5 minutes to throw together if you've already prepared the toppings items earlier in the week. Try to make one thing per day and you'll have a gorgeous salad after just a few days with only minimal work per day!

Dressings for this could be anything that's your favorite, or avocado and lime, or balsamic vinegar, etc!

NOWWWW this was a cool experiment!! The color difference is subtle in the picture but was cool to watch before my eyes: In this bowl is the same pomegranate overnight oats (rolled oats soaked in pomegranate juice overnight). +++++++++++++++++++++++++++++++++++++++
And then to one side, I added grapefruit juice and mixed it in and VOILA!! IT went from the regular purple/lilac on the right side to the magenta on the left side. Right before my very own eyes! So fun!! :D

Then topped with fresh blueberries and said grapefruit. Yum! Delicious as well as fun!

A super hearty and EASY lunch!! If you've prepped some of these things earlier in the week, it takes about 7 minutes to throw together! +++++++++++++++++++++++++++++++++++++++
Drained and rinsed lentils. Cheesy Kale Salad (recipe on blog). And a quick red cabbage and red onion stirfry (water saute sliced red cabbage, sliced red onion and some frozen mushrooms if desired). +++++++++++++++++++++++++++++++++++++++
This lunch may not look like a lot of food but it will keep you full for hours!

Eating healthy doesn't have to be difficult. It can be as simple as throwing some things in a bowl and making a dressing or sweet sauce. This is my super simple overnight oatmeal with some yogurt, fresh fruit, and sweet date sauce. βž•Overnight Oatmeal: overnight oats 🍚made by soaking rolled oats in almond milk overnight in the fridge. (Actually I soaked these particular oats for only about 15 minutes: that works too!)

Now is this pretty or what?! :P +++++++++++++++++++++++++++++++++++++++ The bottom half is my Cheesy Kale Salad (recipe on blog). My favorite salad by far (lately). And the top half is a stir-saute with red cabbage, red onion and mushrooms. I added a little balsamic vinegar at the end. +++++++++++++++++++++++++++++++++++++++ I love to take one bite of each, and then alternating bites. Love love!
