Banana and Blueberry Pancakes.
50 of Oats, 1/2 teaspoon of baking powder, 1/4 banana, 1 egg and dash almond milk.
Blend until smooth. Cook, then top with blueberries, banana and sugar free blueberry maple syrup! 😍😍 I didn't have vanilla protein but if I did I'd add that in too! #breakfast #healthy #pancakes #favouritemealofday

My go to salad! Perfect for lunch or dinner with a side of protein. 🍴 Roast Pumpkin and Feta Salad. 🍴
- 1 small pumpkin cut and deseeded
- 2 red onions
- 100grams of green beans
- 100grams of feta crumbled
- handful of rocket leaves
- tablespoon of pine nuts (toasted)
- salt and pepper
DRESSING - 6 tablespoons of good quality virgin olive oil
- 3 tablespoons of balsamic vinegar
- honey (1 teaspoon or more depending on how much sweetness) - 1/2 teaspoon Dijon mustard
Method:
- preheat oven to 200* fan forced. Cut up pumpkin in small cubes. Cut the onion the same. - place pumpkin and onion on tray brush with oil. Roast for 25-30mins. - Blanch green beans then run under cold water. Then put in large bowl.
- Once pumpkin and onion is cooked, let cool and place in bowl. Then add rest of ingredients. - Pour over dressing and gently toss. Enjoy! ❤️ #salad #healthy #cooking #recipe #amazing #musttry

Wholemeal Banana Bread. ❤️
Ingredients: 3 over ripe bananas, 1/3 cup of melted coconut oil, 1/2 cup of sugar free maple syrup (can use honey or normal maple), 2 eggs, 1/2 teaspoon salt, 1 teaspoon vanilla, 1/2 teaspoon of cinnamon (more to sprinkle on top), 1 3/4 cups of wholemeal SR flour, 1 teaspoon of baking SODA (not baking powder), 1/4 cup of hot water. I Added 70% dark chocolate (also to melt on top) don't have to but taste so good.

Method: ❤️Preheat oven to 165 degreees fan forced. Grease a loaf tin. ❤️ In a large bowl put in flour, cinnamon and salt. ❤️ In a small bowl beat eggs, add coconut oil, maple syrup and vanilla. ❤️ Roughly mash bananas in a bowl (I left mine chunky) also roughly chop dark chocolate. ❤️ Add wet ingredients to dry ingredients and stir. ❤️ Put baking soda in a little bowl and add hot water and stir, now add to mixture.❤️ Now add roughly chopped chocolate. ❤️Pour batter into load tin, sprinkle cinnamon on top and swirl. ❤️ Bake in oven for 40-50mina depending on oven. I did 40mins and it was perfect and moist. ❤️Insert a toothpick and it should come out clean. ❤️ Once taken out of oven let it sit in tin for 5 minds then take out and put on cooling tray. ❤️I ate mine warm (so good) ❤️ Drizzle melted chocolate once cooled. ENJOY! ❤️❤️❤️❤️❤️you can also use walnuts, or dried fruit or almonds instead of chocolate. #cooking #bananabread #wholemeal #treats #chocolate #emmajayepaterson
