#meat #charcuterie #food #fishtaleales #fishbrewing #olymia #whatsupvegans these bad boys brined, filleted twice, rube with sweetrub and stuffed with apples, trussed and smoked for 4 hours. After they were smoked the trussing is removed and so are the apples. The apples are then put into a glaze made of brown sugaar, jalepenos, bacon, and some other special stuff. The bellies will get glazed and baked for an hour, cooled over night and sliced thin for sandwiches...boom!
