Originally inspired from a trip I took to Israel a few years ago, I couldn’t help but re-share this recipe for Thanksgiving this week. My herbed quinoa and pomegranate salad recipe is a healthy, light salad or side dish (naturally gluten free too!) that would make a great addition to your holiday table! My roasted butternut squash soup is a wonderful complement to typical Thanksgiving fare, like green beans and mashed potatoes. I kept the ingredients list simple so the squash flavor can shine through, but the end result offers exceptionally rich flavor! 👌 You can serve the soup straight from your blender or make it the day before and reheat it. I've been eating like it is Thanksgiving for the last few weeks. Food blogger problems! So, I’m seeking balance this week between recipe testing and Thanksgiving with my vegan sweet potato, kale and chickpea soup. I originally shared this recipe five years ago, but it is still one of my favorites! It’s spicy, filling, satisfying and overflowing with power foods and whole grain goodness. I made slight adjustments to the ingredients and cooking method. This version doesn’t need nearly as long on the stove as the original recipe suggested (win!). 🙂 🙌  On the blog today at! #cookieandkate

Cookie is a carrot lover. She does quite the show when she sees the vegetable peeler! So when I make my healthy carrot muffins, she comes running! These muffins taste like carrot cake. I have been working to perfect this Bircher muesli recipe since I finally figured out how to make overnights oats tasty. I have finally decided to share my family’s mashed potatoes recipe. It’s about time! These potatoes are known in my family as Lucille’s mashed potatoes. I’ve contemplated how to offer a “Cookie and Kate” version of these mashed potatoes (as in, a healthier version). But why mess with a good thing?! These mashed potatoes are creamy and dense, tangy and irresistible. One of my oldest and favorite recipes for fall is my pumpkin pancakes recipe. I never thought the old photos did these pancakes justice, so I am sharing it again! This recipe taught me a lot about making pancakes from scratch. Like, that whole grain pancakes can be just as tasty and fluffy as pancakes made with regular flour. I can’t help but crave soup when it starts to get cold outside. There is nothing better than snuggling up with Cookie on the couch and a warm bowl of soup. 👌 🐶  My black bean tortilla soup with sweet potatoes is a delightful vegetarian and lighter version of the classic chicken tortilla soup. I am making homemade applesauce this Halloween! Forget everything that you hate about store-bought applesauce. Homemade applesauce tastes like the inside of an apple pie! I love to eat mine with ice cream, or on toast with peanut butter. Or go wild and layer the applesauce between yogurt and granola for an apple parfait. 🙌 🍎  It's apple season, so don’t wait! Leftover pumpkin purée and diced tomatoes inspired this creamy pumpkin marinara. It tastes like fall with a hint of spice, which is perfect for chilly evenings! “Autumnal Harvest Pasta Sauce” might be more appropriate title (like the Trader Joe’s version I had last year) since it isn’t overtly pumpkin-flavored, but that’s a mouthful. Have you ever walked down the Trader Joe’s aisle and grabbed the mini dark chocolate peanut butter cups AND the salted dark chocolate-covered almonds? This recipe is for you! These little treats are essentially grown-up, homemade Reese’s peanut butter cups. They're made with dark chocolate, filled with maple-sweetened peanut butter, and topped with a little flaky sea salt (optional, but recommended for sure). 👏 🎃 Check out the recipe at #cookieandkate
