I saw them recently up where I am (near Annecy) but don't know what to do with them. How do you cook them?
@kaitew13 The classic way is to poach them in milk and then bake them with a little cheese. Look up “gratin de cardons”
@kaitew13 also good in soups etc. The key is to remove the tough outer stringy parts and to gently cook them in milk or stock etc for about an hour
