When you accidentally buy shredded carrots instead of baby carrots.. make muffins with em! 🥕 recipe 👇🏻
1 cup of Gluten free flour
1tsp of baking soda
1/2 tsp of salt
1/2 tsp of ginger
1/2 tsp of cinnamon
1/3 cup of organic vegetable shortening
2 eggs
1 tbsp of vanilla
4 tbsp of honey
1 cup of shredded carrots

Preheat oven to 350 degrees. Mix flour mixtures together. Slowly add the shortening, eggs, vanilla, and honey to your flour mix (using a mixer). Fold in shredded carrots and place onto a greased muffin tin. Bake for 12 min.

Having trouble cutting carbs? White starches? Try cauliflower rice instead. Super easy to make.. just throw some cauliflower in a food processor, get it chopped until it’s like the consistency of rice, and heat it up with some sautéed onions and seasonings. I paired mine with chicken cooked with coconut aminos (healthier/low sodium option for soy sauce), snow peas, and veggies. Excuse me while I go and drool over this meal.. 🤤

Stacks on stacks on stacks.. these mini muffins I whipped up are gluten free and super low in sugar. Stamp of approval for pre-diabetic and diabetic. Even has protein in it from the flour I used fo that extra protein gainzz. I’ll stop. Check out recipe 👇🏻!
1/2 cup of garbanzo bean flour
1/2 cup of coconut flour
1 tsp of baking powder
Sprinkle of salt
3 tbsp of organic maple syrup
2 eggs
1 tbsp of vanilla
3 tbsp ( roughly) scooped of organic veg. Shortening( this is basically palm oil)
1/2 cup of 100% cacao choc chips zero grams of sugar)
Preheat oven 350 bake for 12 min. I used a mini muffin non stick pan.

Maple bourbon roasted brussels. Yes please! Used @organicvalley maple syrup and my favorite @brooklynbrine bourbon mustard on these babies. Roast at 500 for about 12 min. Happy Sunday friends! 🤘🏻
That kitchen lighting thooo. 💡 Made @thenutritiousprincess banana brownie cookie skillet and holy cr*p guys this thing is unreal. I opted out the maple syrup for some extra 🍌 and used @paschachocolate 100% dark chocolate chips, so the only sugar in here is from 2 bananas! See, eating dessert doesn’t have to be complicated. Making modifications where you need them is all it takes. 🍪🍌
Still daydreaming about my meal with @foodfitnessandfaith this weekend at BimBeriBon. So so good. My “bun” is made of plantains and stuffed with chicken,pickled veggies, and of course avo 🥑 + #matcha. Happy Sunday!

Hi friends! I’m talking cinnamon today on the blog and it’s amazing health benefits! Short and sweet but to the point! Also, when using cinnamon, try and use Ceylon cinnamon instead of processed brands or Cassia cinnamon. Ceylon, is cinnamon in its purest form. I use @simplyorganicfoods! Of course I’d put smiley faces on my cookies .. 🤪🍪. By far, the most delicious, extra fluffiest, yummiest, (running out of est’s) cookies you’ll ever make and they’re gluten free, low glycemic (won’t spike that blood sugar) and include my favorite thing in the world.. peanut butter 🤤. I’m sharing the recipe below !
1 cup of rolled oats ( pulsed in a food processor) - keep a little chunk don’t pulse till its flour
1 tsp of baking powder
1/2 tsp of baking soda
2 mashed bananas
1/2 cup ( or if you’re obsessed like me you can put more) of creamy peanut butter ( melted)
2 tbsp of melted coconut oil
1 egg
1 tsp of vanilla
1 tsp of cinnamon
Sprinkle of salt

Mix wet ingredients together first ( really get those bananas creamy) a mixer or food processor is best for this. Add oat mixture. Shape into cookies on a lined cookie sheet and bake for 12-15min ( watch) at 350.

I enjoyed some tofu with a creamy dairy free chipotle sauce over basmati rice at Nine Mile and topped with off with a chai latte at Odd’s Cafe- yum!
