Warming up with our first lattes of the season from @southernpressedjuicery and it definitely won’t be the last. Tried the Golden mylk latte today with the beauty blend. My husband got the vanilla bean with the brain blend. Both were πŸ‘ŒπŸ»πŸ‘πŸ». Ditch the sugary, fake stuff and go get you a healthified latte!!

Happy Thanksgiving!! We have been snacking on this Cashew Pumpkin dip with homemade almond flour crackers. I’m thankful for many things, one of them being my very creative husband that always helps me come up with new, delicious recipes. As good as he is, he didn’t measure anything so I don’t have exact measurements of most ingredients for you, but here’s what we used.
For the Dip:
-1 cup soaked cashews (soak for at least 12 hours)
-6-7 Tbsp pumpkin purΓ©e
-pumpkin pie spice
-coconut sugar
Place all ingredients in @vitamix and mix until well combined and fluffy.
For the Crackers:
-1/4 cup almond flour
-1/4 cup arrowroot flour
-1/4 cup coconut flour
-1 tsp baking soda
-1 tsp baking powder
-1/2 tsp pink salt
-2 tsp hemp seeds (optional)
-avocado oil (3-4 Tbsp? Add enough until dough is able to be balled up, but still crumbly.)
Place dough on baking sheet, roll out flat, bake at 350 until golden brown. Enjoy!!πŸŽƒπŸŽƒπŸŽƒπŸŽƒ
Starting Thanksgiving break off right with @southernpressedjuicery β€˜s Green Monstah the β€˜Olivia Way’ 😍😍😍 It’s the best!!

I’m dusting off my spiralizer this week and putting it to good use. I used to use this a lot, but took a break. This has been the BEST dish I have made yet. I always make the β€˜zoodles’ too limp by sautΓ©ing them too long. Today they were πŸ‘ŒπŸ»
-2 zucchinis, spiralizedπŸ₯’
-organic tomato paste, no salt added (I add water to thin it out and a little Italian seasoning)
-organic mushrooms
-garlic powder

1. SautΓ© mushrooms in avocado oil over medium heat.
2. Add zoodles and sautΓ© for about 5-7 minutes.
3. Add in tomato sauce, tossing until well combined/coated.

Still can stop craving the delicious food @gatherkitchen now open in Dallas!! Everything is so clean, healthy, not too salty, and yummy!! We ate here twice while we were in town and also tried the snack bar. We didn’t try one thing we didn’t love. If you’re in Dallas stop by and check them out!! Thank you for providing affordable, good-for-you food that also tastes great @gatherkitchen !! πŸ’š
I️ built my own bowl each time with spiralized sweet potatoes, zucchini, mushrooms, tomatoes, broccoli, cabbage, and guacamole. Also, try the infused waters- no sweeteners, only fruit πŸ‘πŸ»πŸ‘ŒπŸ»

Coming back from vacation is always so hard. I love a routine, a refrigerator full of healthy foods, my own bed, & clean clothes, but there's nothing like escaping reality for a little bit 😏 What better way to get back into the groove than making homemade almond milk with @elliesbest nut milk bags?! It's quick & simple not to mention you're avoiding all of the added gums and fillers in store bought brands. Check out my review & how-to on the blog {link in profile}.
And one of my favorite parts? The pulp! πŸ‘πŸ» What delicious things would you turn this into?? The options are endless!

My experience from yesterday's race is on my blog now. {Link in profile.} I wanted to write this so that I will always be able to remember my first marathon and all of the details, but I also hope it's helpful to someone else wanting to run a marathon too.

15 weeks, 391 training miles, 2 'injuries,' 3+ weeks off due to injury = 3 hours, 55 minutes, 13 seconds & 3rd in my age group. My goal was 4 hours or less so I'm happy with that πŸƒπŸ»β€β™€οΈπŸƒπŸ»β€β™€οΈπŸƒπŸ»β€β™€οΈ
Today I ran my first marathon. It is something I said I'd never do, but once the idea started creeping in my head that maybe it was possible there was no way I wasn't going to give it a try. The weather could not have been more perfect (a little rain, but nothing bad). I felt much better than I ever expected. Super sore and tired, but no complaints. After I finished someone asked me if I'd ever do another one. My answer? Yes!! Not anytime in the near future, but I'd love to one day.
Thank you to all of my amazing friends and family who sent me messages during the race and cheered for me. You have no idea how much it helped!! Special thank you to my sweet, loving, encouraging husband who encouraged me when I didn't think I could do it, massaged me when I was sore, rode his bike next to me during all my long runs, brought me food today, & supported my dreams.
