Did it! Sold every loaf and lots and lots of toast at the @hudsonvalleyhullabaloo! Thanks for coming out folks! So awesome to meet everyone and talk bread. And thanks to @markpalmerkeysandcoffee for holding it down all day.

A little TOO excited for this coming weekend, where I’ll be selling my naturally leavened loaves and slanging some toast as @kingstonbread at the @hudsonvalleyhullabaloo. Come through Sat 11/18 from 10-5 for this Kamut Whole Wheat with peanut butter, crushed peanuts, raw honey and sea salt.

20% fresh milled whole Durum, 40% high extraction @farmergroundflour with a Zaatar Crust.
Experimenting with a different baking schedule that has me baking at night instead of early morning. Seems promising. @kingstonbread

Khao Soi ala @ntmrkt cookbook. Love this version. Used some home made lacto cucumber pickles because I couldn’t find any fermented mustard greens

💯 % naturally leavened ciabatta. Been chasing this one since I saw some amazing pics from @daugenbread and @tartinemanufactory. Getting closer every time. Feels good.

So I've been driving myself crazy trying to figure out how to properly steam my oven so that I can bake more loaves at once for big @kingstonbread weekends like the one coming up. Today I thought I failed again, but when I picked up this sort of ugly loaf, and it felt like a feather, I knew I got somewhere. Still trying to debug and gather learnings but damn this is one of the most ethereal crumb's I've ever produced.

Some decent looking loaves as I continue to experiment with different baking techniques. This one is a @kingstonbread country sour boule baked maybe a little too dark.
