Zero point salmon patties for dinner! I ate them with 4SP worth of rice. The recipe makes 8 small patties, and if you ate all of them it would cost only 1SP. Swipe for ingredients and read below for instructions:
🔸Preheat oven to 375
🔸Mix all ingredients together 🔸When forming patties, drain the liquid very well. I pressed them between paper towels.
🔸Bake for about 15-20 minutes or until patties are slightly crispy and/or you can move them around without them falling apart. 💡Eat them over mixed greens for a zero point dinner.

I only used soy sauce, black pepper, and a teeny bit of salt to season my cauliflower chicken fried rice (ignore the rice wine vinegar and sesame oil in the second pic). I wasn’t going for an Ohio shaped pizza but here we are. First try making #twoingredientdough pizza (crust 4SP, turkey pepperoni 1SP, 42g mozzarella 3SP, plus pizza sauce, green peppers, and mushrooms for 0SP). I usually make the same pizza with @flatoutbread for 2SP but had some points to spare. Next time I’ll just stick with the flatout. Too much effort for a so-so crust. 🤷🏻‍♀️ The dough does hold way more toppings without getting soggy or floppy though.

This is my favorite easy salad dressing: 1/2 tbsp maple syrup + dijon mustard (just enough to make a dressing-like consistency). I had it with my zero point salad (chicken, spring mix, spinach, carrots, red onion). All of those things were free, so I only paid 2SP for the maple syrup.

I was not expecting this much of a gain, but it makes sense. 🧐 I don’t think I have gone overboard with free foods; it’s more likely that I am bloated from too much sodium and/or haven’t gotten enough fiber.🥦 (I also got a new scale that is showing almost a pound higher than my old one 😏 but I’m going to log progress on the new scale going forward.) ⭐️THERE IS GOOD NEWS THOUGH⭐️👉🏼 I am down in inches! Since 12/31/17 I have lost 1” around my natural waist, 1.5” belly, 1.25” hips, 0.25” bicep and 0.5” thigh. Though not super scientific, my body fat measurement has gone down 0.8%. 📝So this week I will try to add more veggies to every meal and lighten up on the salt.

During my workout today, it occurred to me that the weight I was squatting was equal to the amount of weight I’ve lost (85lbs). I was basically carrying this barbell around everywhere with me. 😮 Also shoutout to @w0nderrw0mann who makes another cameo in my before story. 😝

🚨Sargento ultra thin provolone is a game changer🚨 Only 1SP per slice! I usually want something cheesy in my sandwich but a regular slice can be costly (3-4SP). The ham I used is only 1SP for two slices, but I only used one (still 1SP). Another note about the ham: each slice is sort of wide and can easily be halved, so really you could make FOUR sandwiches with 1SP worth of ham. Are you still following? 😂 I made 1 egg and 1 egg white in the microwave, added spinach, and ate a glorious 2-ingredient everything breakfast bagel for only 5SP. I’m sure this would taste just as good on sliced bread or an English muffin. I only used the toaster and microwave, so you can easily make this at work. ✌🏻

Sorry that my last three posts have been food related. Lame! But my breakfast bagel looks and tastes so good. This is the last of my 2 ingredient bagels. I kept them in a ziploc bag on the counter; 3 days later they were still a-ok. One egg and 1/2 slice of cheese makes this a 5SP sandwich.
