greencottagekitchen It's that time of year again...Momma's Meyer lemon bushes are heavy with fruit so I scored a large load! We really love preserved lemons. They're simple to make and they're a quick way to elevate even the most humble dish to gourmet status.
Here's the how...
🍋Take any clean jar you have (it can be a mason jar or a bail top like mine) and drop in spices of you choice (or don't). 🍋Set aside a lemon or two in case you need to top off the jar once it's packed. Cut the lemons into quarters but not all the way through, then sprinkle each one with 1 tablespoon of salt. That sounds like a lot, but it's the salt that preserves them and they get rinsed before use. 🍋Fold them back up as best you can and pack them into jars. You want to try and wedge them in, even squishing them a bit in the process so they will be packed rather than floating. As you mash, they release their juice. You want to stop packing at the "shoulders" of the jar, leaving enough room for the juice to cover by at least an inch, and leaving headspace between the juice and the lid. If more juice is needed to cover, add that now. If you don't have lemons to spare use just enough water to cover. Don't use bottled juice! It has preservatives that can inhibit the process. 🍋Cap and let sit for a few weeks (at the very least) to a month before using. If you're using mason jars lay a piece of parchment paper between the lid and jar so you don't have issues with corrosion. They don't need to be refrigerated. They won't mold or spoil (as long as they are submerged) due to all the salt and acid. You can use them up from the jar as you like and the longer they sit, the better they get.
