juliebedford First, I grilled a whole eggplant on my gas stovetop, which was very new and exciting for me. Then, I used it in a totally experimental dinner that worked out beautifully! I love when kitchen experiments turn out well... They don't always, but this one was particularly good. Lentil medley with fresh herbs, greens and garden veggies topped with an eggplant cashew cream sauce and capers! 2h

idontgiveaham I found a microwave in the building next door to the one my classes are in. Now I can pack hot dinners to eat in between my 3:30-6:00 and 6.30-9:00 classes! Pictured are some slice baby bella mushrooms slow cooked in a ton of fresh parsley and some salt, garlic, pepper, and olive oil. Amazing over rice. For real. 5h
