Watermelon rind is rich in vitamins and tastes amazing as a savory salad.

I trim off the green skin and dress the rinds in vinegar, minced garlic, sesame oil, salt. That's it.

Crunchy, refreshing and slightly sweet. This is great for the upcoming long weekend! #MemorialDayBBQ

hellaveganeats Batch of pickled watermelon rind in the works - the perfect crunchy snack if you're drinking a #HellOrHighWaterMelon from @21stamendment
If you want to make your own, follow these instructions:
1. Prepare watermelon rind by thoroughly washing, paring, then cutting into 1/2 inch strips
2. Cover rind in a brine made up of 1/4 cup sea salt and enough water to cover entirely.
3. Allow 24 hours for brine to soak into the rind.
4. Rinse the rind after 24 hours have passed.
5. Place rind into sterilized glass containers.
6. Create a pickling solution from the following ingredients - 2 cups white vinegar, 1/2 cup apple cider vinegar, 1/2 cup water, 1 cup brown sugar, 3 cups unbleached cane sugar, 2 cinnamon sticks, the peel from 1 lemon.
7. Bring solution to a boil for 2-3 minutes.
8. Pour solution over watermelon rind, leaving 1/4 inch of headspace at the top of your glass container. Seal and let cool to room temperature.
Your pickles will be ready to in eat 3-5 days! Enjoy!

People often just eat the red (or orange in some varieties like Orangeglo) flesh of a watermelon, but the rinds contain a lot more added nutrients and minerals that the body needs. Juicing them is a great way to extract these nutrients that can be readily absorbed by the body. According to The Juice Nut, watermelon juice contains a concentration of Vitamin C, beta-carotene, and the cancer-fighting lycopene. The rinds in itself have a high dose of L-citruline which improves blood flow. Here's what I did for this juice. This was from a store-bought mini watermelon. I cut up all the red flesh for eating but left some red intact with the rinds for juicing and for some sweetness. I then cut away the green, outer skin and throw them in my compost pile. The rinds + some red flesh yielded about 2 cups of mildly sweet and refreshing juice. You may add some lime and mint (recipe on NaturalHealth365 [web]) to add flavor to the juice, but other than that, just chill or add some ice and you have a wonderful and healthful refreshment! Ahhh! I can't wait to juice my own, organic watermelon from my garden! 2w

This is not to say that the red flesh has no nutrients, it just that the rind contains more. It is safe to eat and juice. If you’re a little iffy, start out with one or two rinds in your green juice along with the red flesh.

According to some sources, up to 95% of the nutritional content is in the watermelon rind. It contains chlorophyll, vitamin A, protein, potassium, zinc, iodine, nucleic acids and enzymes which aid digestion. It is also a great source for the amino acid citrulline. Citrulline promotes energy and is a natural immune booster. Citrulline is also an effective liver detoxifier (aids in the removal of harmful toxins in the liver). Our body uses citrulline to make arginine (amino acid) to also make nitric oxide, which helps relax blood vessels and lowers high blood pressure. This same amino acid as been shown to improve insulin sensitivity in obese diabetics (type II).
