troopofmonkies I haven't had a proper stir fry for a while, so this is a nice change from my crazy concoctions.
This dish has one red pepper, one large carrot, a head of broccoli, five cloves of garlic, half a finger of ginger, coconut oil, paprika, salt, cayenne, and oregano.
1. Melt about 1/2 cup of coconut oil, with finely minced garlic and ginger.
2. Once they are golden, add chopped broccoli, red bell pepper, and carrot.
3. Add the spices to taste.
4. Allow to steam for about 5-10 minutes, depending on how crunchy you like your veggies.

This meal is quite low in calories, full of nutrients and antioxidants, and could also just make a good larger snack in between meals.
