claudia.lh.chan Lately, I've been crazy about #tofu mousse. Pulse tofu with sweetener/flavourings, place it in the fridge for 1 hr & you'll have a delicious #guiltfree dessert.
My favourite recipe comes from @mydarlingvegan - the bottom layer is full of chocolatey goodness & the top is peanut butter heaven. It's #Reeses cups in pudding form.

  •   im_alittlevegan Happy bank holiday Monday! Loving these lazy brunches over the last few days.
    I made myself a big messy plate of tofu scramble on toasted bread, garlic and coconut kale and mushroom and cannellini beans in a tomato and sweet chilli sauce.

    Scramble:
    Mash a packet of firm tofu with a fork into a heated pan and add:
    Salt
    Pep
    Thyme
    Chopped scallions
    Garlic powder
    Turmeric powder
    And finish with grated violife mozzarella from art of zen foods.

    Mushroom combo:
    Handful of chopped mushrooms and kale in a pan with half a tin of coconut milk.
    Salt, pep, garlic powder
    Bring to the boil reduce and leave to simmer for 10 min.

    Beans:
    Tin of cannellini
    1/2 tin of tomatoes
    (If I wasn't being lazy this morning I would have had fresh tomatoes and dried beans)
    Into a pot with a glug of sweet chilli sauce
    Pinch of chilli and onion powder
    Squeeze of maple syrup
    Splash of balsamic
    Salt/pep
    Bring to a medium heat
    Voila.
    Adjust seasoning to your liking and enjoy!
