karolinesmessykitchen Egg muffins! Perfect for the lunch box!
1)Cut bell peppers, broccoli and onions(or whatever vegetables you like) into small pieces and pan fry for 3 minutes.
2)Mix 12 eggs with 12 tbsp of water (or milk)and spices.

3) place the vegetables in a muffin tray and pour the egg mix over.

4) bake in the oven for 30-50 minutes (until set) and leave to cool on a tray.
5) enjoy with a small salad or on bread.
