flametofork First family christmas celebration tonight since half of us work days and half work nights and we barely have any days off in common - so I kicked off the day with a fritatta of leftover @forkintherd Black Forest ham, red onion and zucchini in pastured, #GMOfree #soyfree eggs all cooked up in @tinstarfoods ghee. Since using mostly her ghee, my @lodgecastiron skillet is almost to perfection as far as a good season goes.
Oh and then @thefeistykitchen goes and cooks pancakes and makes me want breakfast again... Just can't win at this IG thing -Tonja

wholeandhappy DIY acai bowls are my favorite! It can be such an yummy nutrient dense, anti-inflammatory meal if you get pure acai blend it up with a leafy green like spinach, berries, nut milk and top with healthy fats (nuts/seeds). If you are going to a shop that sells acai bowls go for the ones that add greens and include healthy fats. I also recommend asking to see whats in the acai packets. May sound like I'm over doing it to some but often they are loaded with added sugar and contain some common allergens.

Double tap for gluten free awesomeness! I wish I could say this focaccia was made from scratch, but I have to give @CanyonGlutenFree the credit for this one (though it tastes like it was made from scratch!) As I recently discovered @CanyonGlutenFree's breads (all dairy, nut, & soy free!...and of course gluten free), I am having a baking frenzy! .

Rosemary & Thyme Spinach Stuffed Focaccia

INGREDIENTS:
1 @CanyonGlutenFree Rosemary & Thyme Focaccia
2 cups firmly packed spinach
5-6 slices Swiss cheese (or cheese of choice)
3 large black olives, thinly sliced
½ Roma tomato, thinly sliced
½ small red onion thinly sliced .

INSTRUCTIONS:
1. Pre-heat oven to 350 degrees F.
2. Slice @CanyonGlutenFree Focaccia in half, lengthwise.
3. Place Focaccia on a baking sheet lined with parchment paper.
4. Lay 2 cups spinach on bottom half of Focaccia.
5. Next, layer cheese on top of spinach until it’s covered from end to end.
6. Cover with top half of Focaccia.
7. Top Focaccia with sliced olives, tomatoes, and red onion.
8. Bake for 10-13 minutes. Slice and serve immediately. .
