lizpalmiericoonley Chocolate makes me happy. Chocolate fudge makes me very happy. Homemade chocolate fudge free of processed sugars makes me very, very happy. I want to share the happiness with you, so here is a recipe for vegan/paleo chocolate fudge. Use organic ingredients when possible. 1/2 cup coconut oil 1/2 cup cocoa powder
1/4 cup raw honey
splash of vanilla extract

Combine all ingredients in a pot on low heat. Once melted and thoroughly combined, pour into a wax paper lined dish and transfer the dish to the freezer. Once the fudge hardens, cut and serve. I recommend storing in the fridge or freezer because it will melt if left out at room temperature. Enjoy! xo

P.S. - The fact that my Vitamix is back and operational makes me very, very, very happy.

tigerleadership I got in very late last night after an awesome day. Never got a chance to post my dinner. This is the vegetarian version of Tiger Noodles! Plenty of green vegetables, rice noodles.
