eff_being_fat Fuck.. This was a hard one. Yall dont even know what goes on behind the scenes in my kitchen i look like a freak running between a stove and a notepad. Cooking, measuring, writing, changing ingredients, and calculating calories all at the same time to perfect this shit. But fuckkkkk.. It turned out so delish! 580 cals for the entire recipe! I ate 2/3 of it with half a grilled flatbread for a total of 450 calories! Nom nom nom

Fitlicious Fettuccini Alfredo with shrimp

Pasta:
(75 calories)
- 2 raw zucchini turned into pasta (9oz)
- 1 cup mushrooms
- 1/2 cup tomato
Saute the veggies with cooking spray. Till slightly tender. Set aside

Garlic Shrimp
(225 calories)
.
- 7.5 oz (200gr) raw defrosted shrimp
- 3 cloves minced garlic
- 1/2 TBL olive oil
- 1.5 TBL lemon juice
- 1 TBL water or broth
- 2 TBL chopped parsley
- red crushed pepper
- salt pepper
1. Heat oil on high until hot as fuck. Lay shrimp. Cook for 1 min dont stir
2. Add salt pepper. Stir 1 min till shrimp turns pink.
3. Spray cooking spray then add in garlic and red pepper. Cook 1 min. add lemon juice, water/ broth, parsley.
4. Turn heat to low. Cook till shrimp is cooked and not see thru. About 3-4 mins. Set aside

Afredo sauce:
(280 for the entire amount)
- 3/4 cup almond/ regular milk
- 1.5 ounces grated parmesan
- 1.5 TBL low fat cream cheese
- 1 TBL oat / whole wheat flour
- 1/2 clove garlic
- 1/2 tsp lemon zest
1. medium heat, spray cooking spray. Add garlic and lemon zest. Stir for a min. Add flour and stir for a min. Whisk in milk, salt pepper, and whisk till starting to thicken. Add cream cheese, parmesan. Stir for another min or so. Add parsley.
2. Add veggies and shrimp. If you have too much sauce, add more zucchini. If sauce is too thick add broth
