  •   treeselovehappiness For the crispy shallots:
    3 to 5 shallots (depending on size)
    1 tablespoon non dairy milk
    2 tablespoons all purpose flour

    Heat 2 to 3 inches of vegetable oil in a large pot to 360 degrees F. Peel and thinly slice the shallots. Toss with the non dairy milk and sprinkle on the flour. Toss to coat. Fry the shallots (in batches if needed) for about 3 minutes, till golden brown. Drain on paper towels.
    For the spinach green bean casserole:
    1 1/4 pound fresh green beans, trimmed
    2 cups frozen, thawed, and drained spinach
    2 tablespoons olive oil
    2 tablespoons Earth Balance vegan butter
    1 onion, chopped
    2 cloves garlic, minced
    3 cups mushrooms of your choice
    2 tablespoons fresh thyme
    3 tablespoons all-purpose flour
    2 1/2 cups non dairy milk
    1/2 cup veganaise
    1/4 teaspoon ground nutmeg
    Bring a large pot of water to a boil. Add the green beans and cook for 3 minutes. Place green beans in an ice bath to stop cooking.
    In a large sauté pan, heat olive oil and butter over medium high heat. Add onions and mushrooms and sauté till cooked and lightly browned. Add in garlic and thyme. Cook 1 minute. Sprinkle the flour over the sautéed vegetables and stir to combine. Pour in the non dairy milk and contribute to cook and whisk till smooth and thickened. Stir in the Veganaise. Toss the spinach and green beans with the mushroom sauce and add in the nutmeg. Taste and add salt and pepper if needed. Veganaise and earth balance are both on the salty side so I like to wait till the end to add salt. Pour into a casserole dish and top with the crispy shallots. Bake in preheated 350 degree oven for 30 minutes. 5h
