  •   kombucha_laboratory @hsmommy316 After I brew it I add fresh juice to the tea then bottle it.. let it sit for a few days then stick it in the fridge. Once in the fridge it should stop the carbonation process. I have not had any explosions (knock on wood) but I have seen other have them. I'm not sure why my guess would be they let them sit out too long after bottling before refrigeration. What kind of container are you using to bottle? 5h

I recently got quite hooked on fermented food. As it's always best to make yourself than to buy (store bought products often don't have living cultures anymore) I'm making coconut milk kefir at the moment. I'm excited how it will work.

Fermentation is the progress of encymatic transformation of organic substances with the help of bacteria, fungi or biological cell cultures.
70% of our immune system is located in the gut. We also have an "enteric nerval system" with 4-5 times more neurons than in the spinal chord. Holistic medicine sees an important relation between gut health and the general health of the whole body and psyche. So it is very beneficial for our health to make sure we have enough "good bacteria" in our gut.

Probiotic bacteria in the gut are like a protective shield against pathogenic germs. They also decrease the "transit time" of the excrements - the less time the scat stays in the gut the less toxins are re-absorbed into the blood stream.
There are hundreds of species of probiotic bacteria and fungi and each has its own health benefits, they also share a lot of benefits. Postive effects are described on: fungal infections, irritable bowel syndrome, antibiotic-related diarrhea, acne, eczema, caries, high cholesterol and blood sugar levels, colitis ulcerosa, allergies, obesity, hypertension... Fermented food should be consumed regularly to make sure enough of the probiotics pass the acid barrier of the stomach and can settle in the gut.

Probiotics can't cure diseases and are not an all-purpose remedy as often claimed, they are an addition to a healthy diet and lifestyle! If not produced, prepared and consumed with care they can be detrimental to the health due to the high acidity or the growth of mould fungi.

  •   wayfaringgent I aged a pineapple Buch for a few months. Very funky in a good way. I also did a Thai chili, basil, lime Buch. The chili and basil were from my garden. That was a favorite amongst my circle. My buddy did a long aged Buch with Brettanmyces introduced. It was fermented with a four year old culture. The ABV was around 16%. We are all about experimentation here. 8h

lianagasp I've been getting lit up lately about being a #vegan. I'm currently entering week 11 of this journey and have never felt better. I still take a long time figuring out meals when I'm out. But everyone is supportive! @cablerose puts up with my non stop questions about how food is prepared, @momsofstv had a vegan party for me this Christmas. Even my mum @elizabethranie is starting to get involved with this lifestyle. Everyone is supportive (even if they give me a hard time in public)
