all_about_that_plant_life Salsify, one of my favorite spring edibles is out in droves this time of year. Both true and false salsify (purple or yellow) are edible. Young leaves and flowers can be harvested as garnishes or part of a salad. The primary foraging component of this plant is the root. It has a long scraggly taproot that can be cleaned and scraped off thoroughly then eaten. It is best eaten shaved over dishes (or in a latke) or roasted thoroughly due to its fibrous nature. Because salsify has a taproot that reaches deeper mineral rich soil, it has a unique flavor of minerality, parsnip, and earthiness. Many people think it is reminiscent of the sea and several vegan recipes combine it with dulce to make plays off costal recipes. Found throughout the Americas, Europe, and many other regions, this hearty spring plant is easily identifiable, as it looks like a giant, vibrant dandelion.
