theomachies RIP to my beautiful Galadriel (foreground). A fox broke into our duck coop today and took a chunk out of her. My baby boy, Whistles (background), is under vet care and on an IV for the next few days with shock, dehydration and puncture wounds to his chest, but as they apparently aren't too deep, he should be okay. We did have three girls missing - Eówyn, Alaska and Amanda Grayson - but two have since been found seemingly unharmed. Alaska is still missing however. The only duck to escape the entire attack was Bellatrix, who has been staying in the chicken coop recently. All of our chickens are fine. Don't blame the fox at all, only acting on instinct and its been a hard Spring, but can't believe this happened the same day that I flew out of the region. Because I brine my turkey, I do not add salt to my poultry seasoning. I buy all of the ingredients separately and then grind them myself before combining them together. I rub my turkey down with butter, and then apply a generous amount of poultry seasoning. After that, I sprinkle the turkey with onion powder and a little Morton season all. About every hour, I bast the turkey with clarified butter, and then sprinkle on a little more poultry seasoning. After doing this a few times, you will have built up a nice herbed crust on the turkey. When done, the outside of your turkey is a dark brown color - not like your traditional turkey. But the crust is wonderful!! Here is the recipe:

1 teaspoon dried thyme | 1/2 teaspoon dried rosemary | 1/2 teaspoon dried sage | 1/4 teaspoon dried marjoram | 1/4 teaspoon dried tarragon | 1 bay leaf finely crumbled | 1/2 teaspoon black pepper | 1/4 teaspoon nutmeg.
This recipe makes a small amount of seasoning. I have multiplied it at times by as much as 40. The batch that you see in the photo is multiplied 40 times the written recipe.

kristenjas Two days ago, Dallas and I were working outside with bare shoulders. Today it's a winter wonderland. I never get tired of crossing paths with these native feathered friends. Noticed them scratching under the snow into the maple leaf litter, unearthing sleepy bugs. Feeling grateful that the farm is still providing ample forage for them - no spray and no raking for the win! Happy Thanksgiving, American friends! 15h
