Loaf pan, muffin cups, or pie dish, this egg dish is full of green veggies that you don't need to precook and can be customized to whatever you have in the veggie drawer. Add a few seasonings, spicy sriracha?, maybe cheese (nutritional yeast is a great cheese alternative and high in B vitamins and vegan), and in 20 min you have breakfast for 2! Green Frittata:
3 eggs + 1 egg white
1/4c almond milk
Herbs like cilantro, basil, oregano or parsley
1/2 tsp garlic powder
1 tsp tumeric
2 tsp nutritional yeast
Salt and pepper as desired
Preheat oven to 375F. Whisk liquids and seasonings together, then pour into parchment-lined loaf pan. Chop veggies: I used
1/2 zuchinni, thinly sliced
4 mushrooms, chopped
1/2c kale, chopped
Sub veggies to make it how you like; spinach, bell pepper, onion, or broccoli, or salsa.
Press veggies into egg mixture and bake for 20-25 min until firm. Let cool for 5-8 min before removing from pan.
All the greens, garlic and tumeric are anti-inflammatory and the protein and fiber will keep you full, not craving sugar the rest of the morning. Beats a bowl of sugar cereal any day!

thrivingongrace Was in a pinch for a healthy meal for my little one today.... Mom: 1 baby: 1 - she's very difficult to feed sometimes and she was hungry yet refusing everything I offered!!! I know one thing she, and most kids, will never refuse: Mac and cheese. So, I did the old switcheroo and saved the sauce packet for something else and made my own sauce that had more nutritional value and was dairy free. (Thanks for the idea @kvonwerlhof) but I mixed the most random concoction and she ended up SHOVELING it in!!!!! Fed and happy baby = happy mama! Win, win.

Lunch today is leftover sausage & peppers Arabbiata from @againstallgrain - featuring tomatoes, peppers, onions, garlic, and cremini mushrooms. To up the veggie factor I threw in a handful of fresh spinach and sprinkled nutritional yeast on top. That stuff may sound and look gross but it actually tastes good! Kinda nutty and cheesy and a great source of B vitamins and many trace minerals. obesityinme 🔆6:22pm #wheatfree wrap as #pizza, tomato paste, few #pepper slices, 2 mushrooms sliced, sprinkle of nutritional yeast, sprinkle of mixed #spices, sprinkle of beg bouillon powder, sprinkle of mixed #herbs, 1/2 slice of #violife cheddar cheese slice, 2 handfuls of kale, lil cucumber, lemon squeezed. Vvvvvv v VVVVV VERY nice 'pizza'. Crusted a tad too much but other than that the taste was . Love the tomato paste. Had to fold it though bc couldn't cut it lmao. Side of kale to have with each bite of pizza, didn't want it cooked. Was worried about adding too much on to the pizza incase it would be too big. I remember when I used to be so religious with my nutritional yeast... barely use it now😐😐 mainly because it's kind of hidden in the cupboard, plus I don't cook often so. The past 5-6 days of going wheat free are alright; my bloating has reduced in the mornings but it hasn't curbed me bloating in general, which is understandable to me bc I find myself to bloat even after a damn bite. And I enjoy it, because acknowledging wheat inhibits absorption of nutrients isn't pleasing when you are consuming wheat. Wheat once in a while is okay but not as a daily staple(this is my view pls dont feel judged) P.S.
