little_meg_siu_meg Ishiyama San in nigiri action. Only at the age of 30, Ishiyama san certainly has the nigiri actions resembling those of the master sushi chefs. In fact I think has the "cleanest" swiftest nigiri motions among the younger chefs I have visited. And the sushi that he delivers is of the type, shape, size and flavor that I like (which is totally subjective). However, since this place is owned by Kanesaka for providing sushi at a less expensive price point, the quality of the fish may not wow you like some of the premium most high end sushi places. I am mostly happy with the quality of the fish, and most importantly, the rice. 29min

little_meg_siu_meg After being pampered by Ishiyama San with the otsumami, it's time for nigiri sushi. This was always my main focus when visiting a sushi restaurant, but it is very subjective and personal. I know a lot of people enjoy otsumami a lot and don't mind if the sushi is less impressive. Or some (I think most non-Japanese) put a lot of emphasis on the neta - the freshness and variety of the fish and seafood trumps the quality of the shari, or the skill of the sushi chef. Some don't care much about the pace and sequence, etc. There are lots of factors to contribute to "YOUR" good sushi meal and the priority of factors differs by individual. Of course it also depends on the occasion and with whom, whether you are just dining for casual for fun or it's meal you want to check out the real skill of a sushi chef. That's why when one asks me for recommendation of sushi it varies depends on how much I know what you prefer and suits you 2h
