ms.sugarbush Eating healthy and good food is important to me, not just for me, but for my family. I'm a huge advocate of giving kids choices and letting them decide what they want to eat, but having healthy selections for them to choose from is key! Both of my boys (3 and 6 years old) choose their breakfast every morning. They get out what they want and help get it ready. (Unless we are running late, then not so much! lol) This is what my 3 year old picked today. #toast #naturalpeanutbutter #blackberries #raspberries #envirokidz #organic #cereal #leapinlemur Trust me, I know how expensive buying fruits and veggies can be, we go through a lot in my house on a weekly basis. It's 100% worth it to me, because I know my kids have healthy options. I shop things on sale, I know my prices, and I get things in season. Grocery shopping takes conscious decisions, not just shopping quick and easy. honest_grocer Peanut choco chip cookies by @myhappybody Ingredients:
2 small mashed bananas
1 cup raw almonds, blended into a flour-like mixture
1½ cup rolled oats
15 medjool dates, soaked for 10 minutes in warm water, and then drained
4 tbsp natural peanut butter
½ cup dairy free chocolate chips
Method :
Preheat the oven to 180 degrees celsius. Line a baking tray with baking paper.
In a food processor blend the dates, bananas and peanut butter until fully combined.
Add the almond flour and rolled oats and process until almost combined. You still want the mixture to have a bit of texture. If you think the mix has too much moisture after pulsing, add more rolled oats. Transfer this mixture to a large mixing bowl.
Add the chocolate chips and mixed in with your hands (or a wooden spoon – but using hands is so much more fun!) Using a tbsp, measure out a golf-ball size of cookie dough and position onto the baking paper. Do this until you have at least 9 cookies on the tray (will make 14 so you may need another tray). Use a fork to press the cookies into a flatter shape.
Cook for 15-20 minutes until golden on top. Allow to rest and consume with some delicious pics peanut butter on top!
