healthy_mindbody So let's play NameThatBean, peeps! Aww, giving up already?!? OK, it's the humble #soyBean. Before throwing these babies into the crockpot for a long, slow cook (and they do take forever to cook up), I soaked them for two days to initiate germination, increasing the nutrition content, and reducing the #phytates which can bind to certain nutrients and prevent them from being properly absorbed. Now I know there's a lot of controversy and hype surrounding #soy, and here's my take on it. First, I always make sure my soy is #NonGMO, and preferably #organic, since along with corn, soy is a genetically modified crop in the US. And in keeping with my #wholeFoods, #noProcessedJunk eating style, I make it a point to avoid all the fake meats and other junk foods containing soy. So that leaves me with whole, dried #soybeans, #edamame, #tempeh, #natto, and #tofu - tofu is about as processed as it gets for me. Did you know that of all #vegan protein sources, soybeans have the most complete amino acid profile - almost rivaling that of animal products? True story. That's why they are so good to incorporate as part of a healthy #plantBasedDiet, especially for the #veganAthlete and those requiring higher protein intakes, such as the elderly. By the same token, though, #IsolatedSoyProtein should be avoided, because its concentrated protein has been shown to act similarly to animal products by raising IGF-1 levels, which in turn has been associated with a higher incidence of cancer. Soy is also a good source of the short-chain fatty acid ALA, which the body can convert to those essential long-chain Omega3 fattyAcids, though this capability does vary by individual. Just one cup of cooked soybeans - which I just devoured, by the way - contains a whopping 28.6 grams of protein. Oh, and natto - a fermented Japanese specialty - is an excellent source of #vitaminK, which, along with vitaminD and calcium, is essential for #boneHealth. And because it's #fermented, it's rich in good bacteria to enhance #gutHealth. Tempeh, a #traditionalSuperfood from Indonesia, is another fermented, #highProtein #superfood.
