  •   lucyjcloth White bean hummus: use 1 can white beans (I used haricot) drain and rinse or cook if dried. Pop in a blender with two cloves garlic, juice of 1 lemon, 2tbsp #tahina and salt n pepper. Blend and after about 30 seconds drizzle in olive oil as it goes. Put in around 3 tbsp. add in a generous pinch of #paprika and blend until you like the consistency. Serve it up and drizzle with olive oil 2h
  •   lucyjcloth Kale crisps: so easy. Spread a layer of kale on a baking sheet and drizzle olive oil and sea salt. Toss together and bake at 180c for 15 mins or until the kale starts to turn brown and crispy. 2h
  •   lucyjcloth Lentil pate. Cook dried puy/dark lentils to instructions and once tender drain and cool. I made a ridiculously large amount so won't give the measurements! Finely chop one onion and 2 cloves garlic. Sauté in oil until soft and starting to brown. Add a bay leaf, a good shake of thyme and 3tbsp white wine vinegar. Add in the lentil mixture. Take off the heat and stir everything tigeth 2h
  •   lucyjcloth ...together and season to taste. Once cool put in blender and whizz until smooth. Great on crackers or toast. 2h
  •   lucyjcloth Tapenade: again, so easy. I used 1 tub of green olives and half the amount of capers. I rinsed the capers so they weren't too salty, and then added both the blender, along with 1 clove of garlic and juice of half a lemon. As you blend it drizzle in olive oil and salt and pepper until it's your desired texture. I like it chunky. 2h

thechiajar Amazing lunch- sauté onion and garlic with olive oil and salt, add assorted wild mushrooms and sauté. Add a little red wine vinegar and the lemons. Meanwhile roast some tomatoes and chopped carrots with olive oil, salt and a little balsamic ( I used white balsamic for this recipe). I also threw in some chopped black olives towards the end. Add roasted vegetables and cooked lentils to the skillet with the onions and etc and mix while cooking for a min or two. I have also made this by substituting sun dried tomatoes that were sautéed with olive oil and balsamic for a few min in place of fresh roasted tomatoes, and fresh lemon put into tr skillet with the onions in place of cured lemons. #easy #fresh #easymeal #quick #quickandeasymeals #lentils #vegan #carrots #winterfood 5h
