  •   guiltyfleasures @cindoftw thanks! ️ It's made out of special pasty which comes in three different types: khishnah (which is rough): crust made from long thin noodle threads.
    na'ama (fine): semolina dough.
    mhayara (mixed): a mixture of khishnah and na'am. Since I wasn't sure about proper terms for these types of pastry in Turkish, I've used the Arabic terms so don't worry too much about it! I think in Turkey we usually use "khishnah" but maybe "na'am" as well. In this particular picture I think khishnah is used. As far as the actual recipe goes, the pastry is usually heated with butter/margarine/palm oil etc. Then soft white cheese is spread over it, (I think in most Middle Eastern countries Nabulsi cheese is used.) that is all then topped with more pastry. When is comes to khishnah pastry, some people like to roll the cheese into it, but I don't know too much about that because we don't do it in Turkey. Syrup is usually poured over the pastry. You can get all fancy, use a drop of orange blossom or rose water of you like. And you can garnish at the end by sprinkling some nuts such as; walnuts or hazelnuts, but pistachios are ideal!
