theprimalmomgetsfit This is the second time I've made this pizza crust and I think it came out much better this time. It's a little time consuming but it's a fun dish.
What you need:
1 head cauliflower
1/3 goat cheese, crumbled
1 egg
1 tbsp dried oregano

Process:
1. Chop cauliflower into manageable chunks (manageable for a food processor). 2. Fill large pot with approximately 1" of water.
3. Place cauliflower in the food processor and pulse until it is small, grain-like size.
4. Place cauliflower into boiling water. Cover pot and cook 5 minutes.
5. Place strainer in sink. Put a dish cloth in the strainer. I like to use a large cloth napkin.
6. Strain the cauliflower into the strainer and allow the water to drain. Run cold water over cauliflower cooling it. Once water is drained again gather up the cloth around the cauliflower and begin wringing water out. *If the cloth is still hot, run cold water on the outside* Wring until all the water comes out.
7. Dump the cauliflower into a bowl. Add egg, cheese, and herb. Use your hands to blend it all together.
8. Preheat oven to 400°.
9. Line a cookie sheet with parchment paper.
10. Grab a large handful of "dough" and roll into a ball then flatten put in your hands.
11. Place dough patty on the parchment paper and begin flattening it out with your fingers. Use one hand to guide the outside into a circle.
12. Repeat steps 10-11 with the remainder of the dough. Mine made enough for 3 personal pizzas.
13. Bake in oven for 35-40 minutes.
14. Remove from oven add toppings. Return to oven for 10 minutes.
if you'd like you can freeze the crust after step 13. Just place in a sealed ziploc. When you're ready to use, thaw it and complete the pizza making process.
