jennabrockmullerfitness Cauliflower, leek & spinach soup
1 large cauliflower roughly chopped
A few large handfuls of spinach leaves
3 tablespoons of organic butter
3 leeks roughly chopped
8-12 cups of vegetable broth
3 cloves of garlic finely chopped
2 table spoons of olive oil
Pink sea salt & cracked pepper
Fry leaks and garlic in butter and oil, then add the rest of the ingredients and simmer for 10minutes. You may need to add some water. Remove soup from heat and blend until it's nice and smooth. Season with plenty of salt and pepper
