curlyhairchef Last night for dinner I made some Roasted Red Pepper Pasta. It was so good! The sauce had such a nice kick at the end; nothing to kill your taste buds, just enough spice to warm your palate.
All you need is two roasted (oven or gas stove) red peppers, 8-10 roasted cherry tomatoes, sautéed garlic and shallots. Grab your blender, mix all the ingredients with almond milk, red chilli flakes, cornstarch and nutritional yeast. Boil some pasta, I used linguine but any pasta will do. Mix your roasted red pepper sauce with the pasta and add a little parsley. In less than an hour you have yourself a light but healthy meal that will satisfy your belly!
