Chicken thighs roasted with a splash of red wine, tinned plum tomatoes, green and black olives, couple of anchovy fillets, chickpeas and mixed spices. All roasted together at 190 degrees for about 45 minutes. Wash it all down with sum carnival spirits 🏻 1h

Slow living slow cooking inspiration for you all this Sunday

Artichokes - I simply steam them for 20 minutes then melt some butter and dip each artichoke petal in butter and scrape out the goodness with my teeth.
I have a hearty slow cooked soup on the stove made from an old school cheap cut of organic meat (neck of mutton) direct from the farmer
Into the cast iron pot goes the meat, leeks,thyme, garlic, red onion, celery all caramelized with the meat then add water salt and barley, slowly cook.
I will add carrot pieces for colour and texture towards the end of the slow cook. A throw it together inspiration of mine today.

Serving up with artichokes on the side and sour dough fresh bake.
