phitnphat My #masonjarsalad from the #foodprep this week. So good! I have #dole salad blend with some added chopped broccoli and a special black rice salad I made. Black rice, cilantro, green onions, roasted corn and a little evoo. I topped the salad with the Greek yogurt poppyseed dressing and #goodbean chili lime chic peas. This is going in my blog tomorrow! fitwithcrit Sweet Potato Protein Muffins

Ingredients:
-2 medium sized sweet potatoes, cooked and peeled
-1/2 cup old fashioned oats
-4 scoops chocolate or vanilla protein powder (I actually used marshmallow PB)
-1 tablespoon stevia (or sweetener of choice)
-2 egg whites
-1/2 teaspoon cinnamon
-1/2 teaspoon vanilla extract
-1 teaspoon baking powder

Recipe:
1- Preheat oven to 350F.
2- In blender, add all ingredients and blend until smooth.
3-Lightly coat nonstick muffin pan with cooking spray and fill each cup ~ 3/4 full.
4- Bake for 20 minutes (should be golden brown top)
5- Let sit for a few minutes before removing from pan
6- Enjoy!

Servings:12 (1 muffin)
Macros: Calories-100g, Protein-15g, Carbs-11g, Fat-1g
