fides_solsticeinsta Yupp. This's the curry spice paste I used for my Red Curry & Purple Rice shot earlier. U can use any brand of red curry paste u fancy as long as it's authentic Thai.
Now for e Recipe.
Ingredients: 250g chicken deboned & skinned (or pork cut into chunks), Red Curry spice paste 50g, coconut cream 80-100ml (depending on 'thickness' & creaminess u like),
3 medium tomatoes cut in chunks, 20 okra halved diagonally in e middle (also known as lady fingers, noted* not e biscuit), 1 big onion split & chop finely 1/4 onion for pounding & chop e rest in large chunks.
Rempah ingredients: a small handful of dried shrimp rinsed & then soaked in water* for 5-10min, e 1/4 onion (or 4-5 shallots), 5 large garlic cloves.
If u fancy extra kick to e curry, add a couple hot chilies, seed removed.
Pound or Blend/process all Rempah ingredients together till coarsely integrated together.
*Do remember 2 reserve e soaking water for cooking later.

  •   fides_solsticeinsta 5. Add the okra & fry, if it's too dry, splash some of e reserved soaking water of e shrimps 2 moisten it. The key is to Fry & Add water a little at a time until e spices & Rempah mix well with e okra with some moisture, thick sauce-like state but not watery. 6h
  •   fides_solsticeinsta 6. Then add tomatoes & meat, mix a little before adding 80ml coconut cream then mix well to get this thick creamy curry. Then season with salt & bouillon powder to taste & bring it to boil. 5h
  •   fides_solsticeinsta Judge e consistency if too thick, I fear it might burn later on when u simmer so u can add a little water to thin it out a little. If too watery, it will take longer to simmer & boil it down, the coconut cream might "separate". 5h
  •   fides_solsticeinsta Once e moment it boils, turn down e fire from high to low & let it simmer while stirring lightly for abt 15min or until e meat & veggies are just cooked tender. Serve immediately with cooked fluffy rice. 5h
  •   fides_solsticeinsta *Keep a low flame thru out e process of frying Rempah & spices to avoid burning. When all e veggies & meat are added & coconut cream is mixed in, turn to high heat to get e curry to boil. Once it boils, quickly turn to low heat as e coconut crm will "separate" upon long boiling & cease e flames once all e veggies & meat r cooked tender enough. 5h
