compulsivecook Prior to my visit to @softpeaksicecream, my experience with #softserve was limited to trips to McDonald's & it's ludicrous to even compare the two.
From left to right, we got the Green Forest (matcha/red beans), Snowberry (strawberries & cereal) & Honeycomb Peak (with an actual #honeycomb!). All 3 were heavenly but the #matcha was hands down my favourite. #

the_naughty_cavewife This morning I made some Jeweled Amaretto Egg Muffins. 100% #paleo, and free of added sweetners, these little cuties are full of almond flavour and succulent dried fruit. They sure hit the spot for those fun food cravings, but if you're looking for a sweeter muffin, you can add up to a 1/4 cup liquid sweetener, like agave, honey, maple syrup, unsweetened apple sauce or date paste (my preferred choice). Jeweled Amaretto Muffins:
6 eggs
1/2 cup melted butter, ghee, or coconut oil
1 tsp almond extract
3 tbsp almond milk
1/2 cup coconut flour
1/4 tsp salt
1/4 tsp baking soda
1 cup assorted unsweetened dried fruit
Soak dried fruit in warm water until you're ready to use it (at least 10mins). Preheat oven to 350°, and prepare cupcake tin with liners or oil. Whisk first 5 ingredients together in mixing bowl. Sift in following 3 ingredients and whisk to combine. Fold in fruit. Spoon mixture into cupcake tin filling cavities about halfway-- for me, this made 10 muffins. Bake in centre of oven for 20min, and check doneness by sticking a toothpick into the centre of your largest muffin; if it comes out clean, muffins are done. If not, return to oven for 5 minute increments, and continue checking doneness til satisfied. Cool muffins on pan for 10 mins before moving to a cooling rack to cool completely. Post pictures on Instagram, nom, and have yourself a lovely day!

Also I should note that bc I opt not to add the 1/4 cup liquid sweetener, these muffins are on the short side (meaning dry and crumbly), which is totally fine just if you want a moister muffin maybe go for the sweetner. 4min

foodforkat I didn't know Brussels sprouts were popular in Vietnamese cuisine?! Guess I need to make my way over there and find out.

Roasted sprouts and lap cheong with scallion oil and fish sauce. So simple and delicious.
