melliesfitnessjourney Its been a few months since my last progress photo, I have had a couple of bad months with alot of big life changes and have let the diet and gym slip to the wayside. I have still managed to maintain my weighloss progress and even loose a couple more kilos. I am however making my decision to get back into my fitness regime and to loose the last 13kg. Heres to re commit to the journey!!

fitnessfreakintraining Mmm! Just look at that COLOR! Loving this SUPER SIMPLE #healthy #recipe. Follow for more tasty meal ideas!

WHAT YOU'LL NEED:
- 1/2 a red onion
- 1/2 cup green beans
- 1/2 cup yellow bell pepper
- 1 celery stick
- 1 jar Blue Dragon Satay sauce - 1/2 cup basmati rice

HOW TO:
1) Boil the rice in a saucepan, with a 2:1 ratio of water to rice
2) Roughly chop the onion and fry in a pan
3) Finely chop the other vegetables and fry with the onion
4) Add the satay sauce and stir through
5) When the rice is done, drain and mix in with the vegetables and sauce

Et voila!! EXTRAS:
This recipe is so brilliantly adaptable, so you can vary the ingredients dependingn on what's in the cupboard! Somr variations I love to mix things up with include...
- Adding peanuts or cashews (1/4 cup)
- Adding other vegetables, such as beansprouts or broccoli
- Swapping rice for egg/rice noodles
- Adding an egg (whisk and part cook in the frying pan before adding the vegetables)
