pmsdawson FAT LOSS FRIDAY EP 4 - Salmon fillet with feta cheese salad.

No beautiful assistant to film the recipe today so going old school with a picture and the written word. The following recipe serves 2: 2 x 115g boneless, skinless salmon fillets
1 tbsp Kikkoman teriyaki marinade
liberal serving of salt and pepper
2 large garlic cloves
100g cucumber
handful of mixed salad leaves, baby corn and cherry tomatoes
2 spring onions
50g cubed feta cheese
1 tbsp balsamic vinegar Step 1 - Line a baking tray with tin foil and place the salmon fillets on top. Step 2 - Season the fillets with 1 tbsp of teriyaki, 2 large garlic cloves (grated) and a liberal amount of salt and pepper.
Step 3 - Cover with tin foil and place in the oven at 180 for 15-17 mins.
Step 4 - Whilst the fillets cook, chop the cucumber, cherry tomatoes, baby corn and spring onions into small cubes and add them to a salad bowl along with the mixed salad leaves.
Step 5 - Add the feta cubes and the balsamic vinegar and mix together with the tablespoon.
Step 6 - Remove the salmon fillets from the oven and allow them to sit, still covered, for 2-3 minutes. Step 7 - Serve the salmon with the salad on the side AND DIG IN!
Per serving = 340 calories 30g protein 7g carbs 22g fats
