    Aww! Thank you, you too.. And know it just takes a bit of practice. You will see! And there are places who season their tofu well and others don't, and one place I tried they added too much salt. So it varies! 😕
    When I make it, I buy organic extra firm tofu, and I use a #tofu press to get rid of excess water. This can be done also by wrapping the block of tofu in a clean towel and sitting something heavy on top for at least 20-30 min. I also find that sauteeing a combination of veggies (in med-low heat) first gives it much more flavor. I use chopped onion, and sautée that first till soft, then add chopped bell pepper & sliced mushrooms till soft. When I add chopped spinach & or chopped fresh cilantro is towards the end. I think plenty of spices is also important, I crumble the tofu block into the pan with sautéed veggies, then add salt, pepper, turmeric, cumin, and a bit of paprika (optional) just be careful with turmeric if you add too much it will make the scramble taste bitter. Then gently stir it and you can taste to see if you need to add more spices. If you'll add spinach & or cilantro I do it at this point, and just cook a couple more minutes. That's how I usually make it. But there's many ways, and I've found many wonderful recipes online too. Hope you like it if you try it!! 1d

healthination We are so very excited to launch #CleanEating with @bewellwitharielle. First item on the menu is health-ifying your favorite takeout staple! Quinoa "Fried Rice"

1 box white quinoa (approx 2 cups)
1 red pepper, chopped
1 white onion, chopped
1 can baby corn
3 eggs, pasture raised
3 tbsp. toasted sesame oil
2 tbsp. white sesame seeds
1 box frozen peas
2 orange carrots, chopped
1 can sliced water chestnuts
1 tbsp. regular sesame oil (or olive oil)
4 tbsp. tamari
2 scallions, chopped
Dash sea salt

Rinse quinoa and cook according to package directions.

Thaw peas by running them under cold water in a colander.

In a large sauté pan, saute peas and chopped veggies in a pan with 2 tablespoons of sesame oil

Once veggies are cooked, add cooked quinoa and stir.
Make a little hole in the center of the veggie-quinoa mixture and crack eggs. Scramble the egg with sea salt in the center of the pan, let cook and then stir it around with the quinoa mixture so everything is mixed together.

Sprinkle tamari, toasted sesame oil, scallions and sesame seeds on top. Serve with chopsticks and enjoy
