5spices Pan Seared scallops in coconut oil with baby bok choy
Coconut oil is so fragrant that it really adds flavor and balance the salty taste of scallops, making this dish an easy and elegant dinner
Thanks to lauric acid, coconut oil is also super healthy because it has an antibacterial and anti fungal property.
Plus, it's a medium chain fatty acid which unlike long chain ones found in meat or milk is not sent to fat cells but metabolized in the liver in a flash.
That super-rapid metabolic action actually burns more calories than the fat contains!
The fat in coconut oil can help you burn calories
But be careful to buy organic extra virgin coconut oil to ensure it's pure, rich in lauric acid and raw so that you really get the benefits of it 🏻
Here is the recipe, I hope you like it :

people :

Cook some white rice in a rice cooker for 2 people

1 Tbsp soybean oil
1 finely chopped garlic clove
1 Tbsp finely chopped green onion
300 g baby bok choy leaves
1/3 cup water
Salt and pepper
A drizzle of sesame oil

1 tsp coconut oil
16 small pat dried scallops coarse salt

1- prepare the baby bok choy :
Heat the oil in a wok on high heat.
Cook garlic and green onions for 1 min until fragrant.
Fold in the baby bok choy leaves and sauté for 1 to 2 minutes.
Add water, season to taste with salt and pepper, cover, then steam for 2 minutes.
Drizzle with a little bit of sesame oil and set aside covered to keep it warm while cooking the scallops.

2- Heat a skillet over medium-high heat, swirl in coconut oil and coat bottom.
Season scallops with coarse salt then add to skillet.
Cook, undisturbed 1 to 2 minutes (until browned on bottom).
Flip, season with coarse salt and cook until browned and cooked through but still pink in center, 1 to 2 minutes.
Serve on top of baby bok choy leaves and rice.

Happy Mother's Day And it's gluten and lactose free
So here's the recipe :
- 2 cold egg whites (and pinch of salt)
- 125 g dried shredded coconut
- 100 g caster sugar
whip egg whites with a pinch of salt until firm.
mix sugar and shredded coconut then pour into the whipped egg whites and stir delicately with a wooden spoon until well mixed but not overmixed.
Shape from 10 to 20 small pyramids by hands and put them lightly apart on a oven metal plate covered with a baking sheet.
bake 15 to 20 min at 180 Celsius degrees then let cool on a baking rake.
