squidia.vegan.naturopath today we're leaving queenstown and heading south, so in preparation of nary a vegan option available we picked up some raw food from jan at rawmazing this morning. she very kindly prepared us a mixture of energy bars, cheesecakes (raspberry and matcha) and peppermint cups, as well as a selection of raw cheeses (including a walnut truffle, gouda and sunflower), crackers and grawnola - we are set!!     Base-Crust:
    20 Pitted Fresh Dates
    1/2 Cup Chopped Hazelnuts (you can also make it yourself just chop some hulled pistachios in a blender or food processor for a very short time so that it only chopes them and not become powder like)
    1/2 Cup Chopped Pistachios (you can also make it yourself just chop some hulled pistachios in a blender or food processor for a very short time so that it only chopes them and not become powder like)
    1/2 Cup Thinly Sliced Almonds
    1 Pinch Himalayan Salt
    1 Tsp Pure Vanilla Powder
    Raspberry Chocolate Filling:
    2 Cups Raw Cashew Nuts (Soaked overnight or soaked in warm water for 1 hour)
    2 1/2 Cups Frozen Raspberries
    1 Tbsp Coconut Oil
    1 Cup Coconut milk
    1/2 Cup Agave Syrup
    7 Tbsp Raw Cacao Powder
    1 Tsp Maca Powder
    DIRECTION
    For the base add all the base-crust ingredients in a mixing bowl and mix well with your hands until you get a dough-like texture.
    Put a cooking paper or some cling film on the bottom of a deep cake pan, so that ones cake frozen you can take it out easily. Then press mixture into form on the bottom of your cake pan. Place this base in your freezer while you are getting the raspberry chocolate filling ready.
    Then blend the raspberry chololate filling ingredients in a food processor or a high speed blender until smooth. And pour it over your chilled base from your freezer. and place it again in the freezer. Place your cake back in the freezer at list for 6 hours (or overnight) before serving. Once ready take it out from the freezer, remove it from the cake pan and place it in a big cake plate. Place it in the fridge for about 20 minutes before serving so that it softens a little. You can decorate the top of the cake with fresh raspberries or blueberries, or any kind of fruits of your choice.
    You can keep this cake in the freezer for 1 to 2 weeks. And you can even play around with the ingredients and make your own version of it! I always try to use organic ingredients as much as i can find them.
