healthyhappycas Breakfast was 2 slices of sprouted grain toast with 1 tbsp of honey, a cup of bloobs, and 1/2 cup of oats with 1 tbsp of PB. Yassss I finally have a membership to a gym!! I got a Y membership for my birthday from my dad and my Y just got all new equipment and redid the fitness center! I'm supaaa excited! servingclean SOOO I didn't go for a run this morning because 1, I forgot to plug my phone into charge last night so it was almost dead when I woke up and 2, it's kinda raining. ANYWAY. I spent my extra time how any normal person would.. by making breakfast I made white chocolate pancakes using @kodiakcakes power mix, jello ff/sf white chocolate mix, and @tryabouttime birthday cake whey with crushed white chocolate m&m's inside. topped with berries, truwhip, and syrup. WORTH ALL 455 CALORIES I actually wanted to have more than I normally do for breakfast because I'm eating so early so I gotta last till lunch ️ I literally took so many pictures of these pancakes, maybe I'll post another later

activeandmindful It's winter now in Australia, so for most people getting enough sunlight while working 9-5 jobs or studying is near impossible. The danger of not getting enough vitamin D is all too real but you can always trust nature to provide us with a food solution.
While we may not be able to get enough sunlight, exposing fresh mushrooms (gills facing up) to the sun's rays greatly increases the natural vitamin D content of this food!
I know it sounds crazy right? But it works!! Most people know that our skin produces vitamin D upon exposure to sunlight, but what the majority of us don't know is that mushrooms are able to produce vitamin D in a similar manner when exposed to UV light.
Mushrooms are naturally rich in ergosterol (pro-vitamin D). The action of sunlight (or UV light) on the surface of the mushrooms changes the pro-vitamin D to ergocalciferol (vitamin D2). You can buy sundried or wild caught mushrooms that naturally contain higher vitamin D levels. But if this isn't possible for you (these options can be more expensive), exposing store bought mushrooms (eg. the common button mushroom) gills facing up to sunlight between 10am and 3pm will increase its Vitamin D content.
One researcher found that shiitake mushrooms that had been grown inside increased their vitamin D content from 110 IU (international Units) to a massive 46,000 IU after being put outside in the sun for 6 hours gills facing up. When the gills faced down it rose to 10,900 which is still impressive in itself.
