danikabrysha I made dinner for my best friend last night and she said this was “the best meal I’ve ever made her” and then proceeded to say that it was “the best thing she’s ever eaten”. And while I hope that last statement isn’t true, I will admit that this is officially one of my favorite recipes to date. It’s seriously delicious! The secret ingredient is mango and it is totally Whole30 and Paleo compliant!  It looks labor intensive and it isn’t the easiest recipe but I promise it is completely doable, even for a newer chef.  You do need a food processor or blender to make the sauce and cauliflower rice though. .
Serves 4- Use organic ingredients whenever possible... .
1 green bell pepper, chopped
1 yellow onion, chopped
2 small sweet potatoes (or 1 medium), chopped
2 chicken breast, chopped
5 cloves garlic, minced
1 mango, chopped
1 can full fat coconut milk
3 carrots, chopped
2 heads cauliflower
2 Tbsp ghee
1 Tbsp ginger, minced
1 Tbsp curry powder
3 tsp salt
1/4 tsp red chili flakes
1/2 tsp turmeric
4 basil leaves + 1/2 cup basil chopped

Salt chicken and bake in oven at 400 degrees for 30 minutes.
Cut cauliflower into chunks and add to food processor.  Do each head separately so you don't over load. Pulse until rice-sized or a little larger. Do not over process.  Set aside.
In a large skillet add 1 Tbsp ghee. Add sweet potato, onion, carrots, and bell pepper.
In a small skillet, heat 1 tsp ghee and add minced garlic. Saute for 3-5 minutes.

In food processor, add garlic, coconut milk, mango, ginger, 4 basil leaves, curry powder, salt, turmeric, red chili powder.  Process until well combined.

Add sauce, chicken, and chopped basil to sauce pan.  Combine well and cover. Simmer on low heat for 30 minutes, stirring every 10 minutes.

In a separate skillet on medium heat, add 1 Tbsp ghee, Cauliflower, and 1 tsp salt.  Salute for 10 minutes.
Serve curry mixture on a bed of cauliflower rice.
