(My children love that song!) Happy Sunday... last night before bed I made a big bowl of overnight chia pudding (I always make alot but it does get eaten over a few days & saves time on school mornings) TERRIFIC TURMERIC CHIA 2/3 cup chia seeds
3 cups oat milk
1/3 cup coconut shreds
1/3 cup finely chopped prunes
5 Medjool dates finely chopped
1 tsp turmeric
1 tsp all spice
1 tbsp maple syrup
freshly grated vanilla bean

Mix well (I use my manual potato masher), put in fridge overnight & wake up to a healthy ready made brekkie Add more milk if needed, give it a stir & to finish I added a squeeze of fresh lime juice for an extra kick... adjust the sweetness & add more maple syrup if necessary...we like it not too sweet but each to their own I layered it with these beautiful purple grapes & it was incredibly delicious! FACT: did you know that just ONE TABLESPOON of chia seeds has SO MUCH MORE calcium that a glass of dairy milk???... when you compare 100g of chia seeds to 100g of dairy milk: there is 631mg of calcium in chia seeds versus 125mg of calcium in dairy milk 34g of fiber versus 0 fiber in dairy milk 7.7mg of iron versus 0 in dairy milk 17g protein versus 3.4g in dairy milk...so much effort to take cow's milk away from calves when you can just use a better alternative I think it's wonderful to be open to learning new things & have the choice to make a KIND & HEALTHIER option Have a great Sunday
