darling_huda Watermelon Fig Caprese Salad

#watermelon has always been a great stand-in for tomatoes, especially when nightshades were a no-no. I wanted a more summery, take, and not just by adding shaved onions and slicing everything beautifully. But brightening things up with light, fresh flavors that left me feeling comfortably full and cool as a cucumber. · 1/8 small seedless #watermelon, bite size chunks (pick you're fave, it's what we had)
· A good sprinkle of #salt, 2 pinches at least (please taste it as you go), and toss until all the watermelon is covered. Let sit to release juices.
Toss pieces every 4 to 5 minutes.
· While watermelon is #brining: ~slice 2 #figs into eighths ~pull #mint from 2 or 3 sprigs, roll and #chiffonade (slice thin!) ~rinse small fresh pearl #mozzarella, 2 to 3 oz (or cube larger pieces) ~pull out the #salt (#kosher, #finesea, #pinkhimalayan, or #mineral/@Realsalt), #pepper grinder, and #balsamicvinegar that you'd use for guests, not that watery crap with nary a hint of #caramelized #fantasmagoric #sweetness underneath a #smooth #delicately developed #tang that is #fruity, #deeplyflavorful, and pours like #heavycream. (I have my #foodfetish (es), you have yours. #dontjudge :) )
· Add the figs, mozzarella, mint, salt and pepper to taste, and toss.
· Drizzle with balsamic lightly, using a tablespoon at first. Then toss, and taste. It shouldn't be super dark, so go slowly with the vinegar. If you like more, go for it!
· Once the flavors mingle for 5 to ten minutes, toss again to distribute the wonderfully drinkable glaze that the melon water and balsamic have made. It should taste light, sweet, and have just enough tang to cut the sweetness. · Finish with a TINY drizzle of balsamic and a flower of mint leaves.
NOTES: shaved shallots or red onions could be added as another element, and basil could easily be swapped for the mint for a more savory swing. Also, this works well with strawberries and mangoes (skip the vinegar) as well!
