good_food_karma I love experimenting in the kitchen. It makes my heart sing! I came home today knowing I had to use up some beets that I roasted over the weekend. Combine that with my need to find any excuse to crack open a pretty little package of local goat cheese in my fridge and my craving for an omelette and voila! ... The Roast Beet and Balsamic Goat Cheese Omelette with Dill is born. The kitchen is a disaster and my belly is full. All is well. 10h

  •   jenellepenner 3 egg yokes
    3 egg whites (room temp)
    1/4 cup milk (I used unsweetened almond milk)
    1 cup almond flour
    1/4 tsp salt
    1 tsp pure vanilla
    1 tsp maple syrup
    2 tbsp coconut oil (melted)
    1. Preheat waffle iron
    2. Whisk egg yokes and milk together
    3. Add almond flour and salt. Whisk until smooth
    4. Add melted coconut oil
    5. Wisk egg whites in a seperate bowl until stiff
    6. Fold egg whites in batter (in 3 seperate pours)
    7. Add maple syrup and vanilla
    8. Use 1/3 cup of batter and pour into waffle iron (I used more till it was nicely covered on my iron)
    I topped mine with fresh strawberries and blueberries and coconut whip cream!
    To make coconut whip cream buy a can of full fat coconut milk (Thai brand is great) and put in fridge overnight or a couple hours. The take the hard white coconut out and leave the juice, add vanilla and cinnamon and whisk till smooth!
